Rinse the amaranth (cholai) seeds in water and soak for 2-3 hours.
Drain the soaked seeds and grind them into a coarse paste without adding water.
In a mixing bowl, add the ground amaranth (cholai) seeds, grated carrots, grated beetroot, chopped spinach, chopped coriander leaves, cumin powder, coriander powder, red chili powder, and salt. Mix well.
Divide the mixture into equal portions and shape them into small tikkis.
Heat a non-stick pan and place the tikkis on the pan. Cook on medium heat until both sides are golden brown.
Serve hot with mint chutney.
