Boil water in a saucepan, add salt, and blanch the chopped fenugreek leaves for 2-3 minutes. Drain the water and keep aside.

Add the boiled potatoes and sauté for 2-3 minutes until they turn slightly golden.
Add the blanched fenugreek leaves, turmeric powder, and salt. Mix well.
Cover the pan with a lid and let it cook for 5-7 minutes over medium heat until the potatoes are cooked and the fenugreek leaves are tender.
Serve hot.
