Aloo Kulcha is a popular North Indian dish that is usually made with refined flour (maida) and stuffed with spiced potato filling. Cooking Steps
In a mixing bowl, combine the whole wheat flour, salt, and baking powder. Mix well.
Add the low-fat curd and mix again.
Add water little by little and knead a soft dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
Add the mashed potatoes, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the spices are well combined with the potatoes. Keep aside to cool.
After 30 minutes, divide the dough into equal parts. Take one part and roll it into a small circle.
Place a tbsp of the potato filling in the center and bring the edges together to seal the filling.
Dust some flour and roll the stuffed dough into a circle of about 6-7 inches in diameter.
Heat a tawa or a griddle over medium heat. Place the kulcha on the tawa and cook on both sides until golden brown.
Serve hot.
