Instructions
Cooking Steps
In a pan, dry roast the fennel seeds, mustard seeds, cumin seeds, coriander seeds, fenugreek seeds, and nigella seeds over medium heat until fragrant. This should take about 2-3 minutes.
Remove the pan from the heat and let the spices cool to room temperature.
Transfer the cooled spices to a blender or spice grinder and grind them to a fine powder.
In a bowl, mix the ground spices with red chili powder and turmeric powder.
Store the Achari Masala in an airtight container in a cool and dry place.
